A small family kitchen in Nagoya

Owner chef Isao Shimmura grew up in a small family kitchen in Nagoya. He has more than thirty years of culinary experience, and brings to Bangkok traditional Japanese methods that are rarely seen in Thailand.

“Every dish should share a smile, through its flavour and through the warmth put into every step of making it.”

和笑: harmony and a smile

Our name is written 和笑. The first character, wa, means harmony and is also used for Japan. The second, shō, means a smile.

From Toyosu, every week

Our core ingredients are flown in weekly from Toyosu Market in Tokyo, so the sashimi, the tuna and the uni on your plate begin their journey in Japan.

Methods rarely seen in Thailand

  • Nagoya-style grilled unagi: crisp outside, tender inside, with our house glaze.
  • In-house dry-aged fish.
  • Premium sashimi, including bluefin tuna and otoro.
  • Grilled sushi omakase.

Our vision

“To be Bangkok’s most cherished destination for authentic Japanese dining, where every meal is a celebration of Nagoya’s rich culinary heritage.”
